Foodies flashback
One of the favourite haunts for guests staying at The Oriana is the Bathers’ Pavilion – just a short stroll away. Bathers’ has been closed for major renovations for several months, so its reopening on the 4th October has been eagerly awaited.
Serge Dansereau, the famous chef is now partnered with restaurateur, Ian Pagent (MG Garage, Fuel and Cleopatra’s), to set a new standard in fine dining. Ian was a former guest of The Oriana and is now a neighbour.
Ian’s daughter, Jessica Shirvington (married to Olympian Matt Shirvington), as the Director has a line-up of top chefs to join Serge. Cameron Johnson, formerly from St Claude, Kumiko Endo of Attica, and Tetsuya will become the new head pastry chef. I am told the pastries are out of this world.
I understand the 1000 plates ordered are handmade with Japanese clay by Mosman potter, Malcolm Greenwood. A new menu incorporates and invigorates old favourites with some new exciting dishes – using ingredients sourced from all around Australia.
